How far ahead should we book?
As early as you can. A few weeks lets farms plan the harvest; a few days means buying what is already listed.
Can the headcount change?
Up to the cut-off, yes. After that the crop is already picked for you.
Will you deliver to a field?
If a van can reach it. Tell us the access when you book.
What happens to what is left?
We can route surplus to a kitchen near the venue rather than let it go to waste.
